bigleaf Maple: the rarest maple syrup available
Far from the bustle of the city and freeways, our 200 acre farm is located in the peaceful Acme Valley in Washington State. Two hours north of Seattle, Washington, the fertile South Fork basin provides the most unique and rich soil farming in the region. Here we have tapped hundreds of Bigleaf Maple Trees that sprouted along the banks of the Nooksack decades ago and have grown up naturally ever since.

Tapping Maple Trees for syrup is a non-invasive, sustainable practice that does no harm to the trees. Back east, folks have been tapping the same trees for hundreds of years. We cherish the land we farm, and we’re proud to work alongside nature in a symbiotic way.

When Neil started telling people that he was going to tap our west coast trees for syrup, no one believed it could be done. “You can’t tap these trees!” and “Ain’t no sugar in Bigleaf sap,” were common responses. Five years and many of gallons later, we can definitively state that you can indeed tap Bigleaf Maples, and you can tap them here on the West Coast.
And it tastes delicious.
